Vegetable Juice Pulp Crackers

The very first time I put vegetables through the juicer I noticed the large amount of excess pulp. I am asked quite often if I do anything with that pulp. My answer to that question has always been, "No, I just throw it in the trash." Not only does it make my trash can reek, it's an awful waste of perfectly good healthy fiber. So, I did a little searching around on the inter-webs and found this video which seemed straight forward and easy to accomplish. Turns out, it is very easy. All you need is some flaxmeal (or something similar), some water, an oven, cookie sheet, and of course, your vegetable juice pulp. My pulp was leftover from Orange Beet.

First preheat your oven to 375 degrees. Then mix about a cup of flaxmeal, a cup of water, the pulp, and stir it up real well. I maybe had 3 cups of vegetable juice pulp (didn't measure). Once you have it all mixed up flatten it all out on cookie sheet and put it in the oven for about 35 minutes. What turns out is more of a bread rather than a cracker, but it is surprisingly pretty good! The next time, I will try sure to put in some cinnamon or something to make it more of a treat :) If you have any tips or experiences making vegetable juice pulp crackers I'd love to hear about them in the comments!
